This is probably like nothing you will have ever tasted. I feel the body and sweetness is incredible from this coffee. The intensity is high too probably because of the freshness of the crop and the method used during processing at the farm. The initial taste you get is a burst of gooseberry followed by a lovely sweet dessert wine flavour. The after taste is one of chocolate and certainly leaves a smile on my face.

The method used during processing is called semi anaerobic and its where they lay the cherries out on a big tarp and then they fold the tarp like a sausage and leave it dry like that for 72 hours. The method results in limited oxygen to the coffee which gives it that unique flavour. 

We recommend using the 4:6 V60 method as seen here https://youtu.be/wmCW8xSWGZY and afterwards add 40ml of hot water after the brew to slightly dilute it. We found this to give stunning results.
