Where to start with this one. Firstly, it was everyones favourite on the cupping (tasting) table. Big body, sweet, complex, a little wild and very yummy. This is the first time we’ve had an extended fermentation washed processed coffee and it hasnt let us down. We normally skip these kind of coffees because they are often overly funky, but the farmer did a great job here. Its got some really interesting wild notes without tasting off or too strange.
Yermy's farm is located at 1950 masl in the municipality of Chachagui, Nariño. This lot is 100% Typica, and the cherries have been fermented between 40-72 in tanks before being pulped, the parchment is then fermented and dried.
